Yellow Split Pea & Spinach Soup

 

This soup is to die for and can be made ahead and simply reheat it to serve. It is our Honey Ginger Dressing that gives the soup the perfect blend of sweet, zest and spice.

COOK TIME: 25 MIN


INGREDIENTS:

  • 2 cups of yellow split peas

  • 8 cups of water

  • 10 oz. frozen spinach

  • 5 tbsp Nal’s Kitchen Honey Ginger Dressing

  • 13 Thai chili peppers 

  • 1 tbsp. of oil

  • 2 tsp. or to taste coarse salt

INSTRUCTIONS:

  1. Place all ingredients in a pressure cooker. After 2 whistles, turn off the heat and open the pressure cooker when safe. If the yellow split peas are not cooked to the desired texture, continue to cook on the stove until finished. Stir well to mix all the ingredients.

  2. Add an additional 3 tbsp. of Honey Ginger Dressing, if needed and add an extra ¼ tsp of salt to taste, if needed. Stir before serving.

Tip: This dish can also be prepared using a saucepan/slow cooker/instant pot.
