Roasted Eggplant Dip/Side-dish

Made with ingredients that celebrate simplicity and flavor — no fuss, just delicious. Perfect as an appetizer or a side that steals the show.

COOK TIME: 60 MIN


INGREDIENTS:

  • 2 American Eggplants

  • 1-2 medium size red pepper

  • ½ cup of finely chopped onions

  • 2-4 springs of cilantro leaves only

  • 6 tbsp of Nal’s Kitchen Honey Ginger Dressing (Preferred flavor choice Chili Flakes)

  • 1 tbsp of pine nut (optional)

  • Salt to taste (optional)

DIRECTIONS:

  1. Pre heat oven to 4500f

  2. Wash eggplants and peppers. 

  3. Use a fork to poke the eggplants on all sides. 

  4. Cover eggplants with foil.

  5. Cut the peppers half lengthwise.  Remove seeds and the white membrane.

  6. Arrange eggplants on a baking tray and place in the oven.

  7. Place peppers cut side down on a baking tray and place in the oven.

  8. ~30 minutes the peppers skin will blister and be charred.  Remove from oven and place in glass bowl. Cover with cloth / plastic wrap for ~ 20 minutes or till cooled enough to remove the skin and discard. Cut roasted peppers into small bite sizes.

  9. ~45-60 minutes, depending on the size, the eggplants will be done.  Check by touching the eggplant covered with foil with the back side of the fork. If it gives when touched it is done. Remove from oven.

  10. When the eggplants are cool enough to touch. Open the foil. Cut eggplant lengthwise and scoop out the flesh from the skin with spoon or a fork.

  11. Place scooped flesh of the eggplant in serving bowl. Mash with a fork leaving some pieces for a texture.

  12. Add 1 roasted pepper cut into small bite-size to the eggplant. Add more as per taste.

  13. Add 6 tbsp of Nal’s Kitchen Honey Ginger Dressing to bowl and mix gently.  Taste and add more as needed.

  14. Sprinkle 1/8 cup of chopped onions, cilantro and pine nuts to the dish.

  15. Keep remaining onions next to the roasted eggplant dish to add as per taste.

  16. Serve with flatbread

Store unused roasted peppers in an air-tight glass jar and keep refrigerated
