Spicy South Indian Mutton (Goat) Curry
Spicy, bold, and full of South Indian soul — this mutton curry is pure comfort in every bite. The kind of dish made for cozy days and long, laughter-filled meals.

INGREDIENTS:
4-6 tbsp of cooking oil
20-25 gms (0.7-0.9 oz) of dried whole red chilies
140 gms (5 oz) of whole peeled garlic
½ cup of finely chopped onions
1 jalapeno chopped
2 lbs of goat (lamb or Beef) meat
3 tbsp of Nal’s Kitchen Ginger Spread
(Preferred flavor choice -Mild)
2 tsp of Kosher/coarse salt or as per taste
Small/medium (140 gms/5 oz) tomato
DIRECTIONS:
Cut meat to 1-1.5 inch cubes. Similar to meat cut for stew.
Wash and pat dry the meat cubes. Set aside.
Add oil to a wok /sauté pan and cook on medium heat.
When the oil is hot add dried whole red chilies. Give the chilies a little crush in the palm before adding to the hot oil. Stir for a minute.
Add garlic and stir for couple minutes.
Add finely chopped onions & jalapeno and stir for a minute.
Add meat to the pan and mix well.
Add Nal’s Kitchen Ginger Spread and mx well.
Add salt and mix well.
Add chopped tomato and stir for a minute.
Cook on medium heat. If smoke appears promptly lower the heat.
Stir periodically to ensure even cooking.
When fully cooked all the juices will be absorbed by the meat.
Tips: All ingredients are needed for the dish. Quantity of the ingredients can vary slightly. Follow the order of adding the ingredients. High heat can cause pan to smoke, reduce heat immediately, if needed only, add small amount of water (start with 1/8-1/4 cup).
Option: Can be made with boneless goat meat too.
