Meal to Share Chickpeas Hummus and Bison

Chickpeas hummus and bison dish made with Nal's Kitchen dressing and spread

Gather friends and family, grab your favorite beverages and enjoy this simple delicious meal. Made with our healthy Honey Ginger Dressing and Ginger Spread in less than half hour. Serve with warm pita bread or romaine lettuce.

INGREDIENTS:

  • 1 ½ lbs bison tenderloin (or any meat of your choice)

  • 2 15 oz canned chickpeas

  • ¼ cup of Nal’s Kitchen Honey Ginger Dressing

  • 2 tbsp. of Nal’s Kitchen Ginger Spread

  • 1 jalapeño (Preferable a red color jalapeño)

  • 1 tbsp. of pine nuts

  • 2 tbsp. of olive oil

  • 1 tbsp. of olive/cooking oil

  • 1 tsp. or to taste of coarse salt

  • 1 tsp. or to taste of black pepper

DIRECTIONS:

Bison Meat:

  1. Rinse meat and pat dry.

  2. Cut meat to 1 to 2 inches pieces. 

  3. Place meat in a bowl and rub salt and pepper on the meat & then rub the meat with the Ginger Spread. 

  4. Cover and refrigerator for 2 to 4 hours.

  5. Add 1 tbsp of cooking oil to the pan and on medium high heat bring pan to hot and then place the bison meat (do not over crowd. Cook in batches). Turn pieces to evenly brown both sides. Takes about 3 minutes total for each batch.

Chickpeas Hummus:

  1. Cook on medium heat, to a small pan add 2 tbsp. of olive oil and a coarsely cut jalapeño (the red color will add light reddish hue to the hummus), till jalapeño is cooked.

  2. Empty one can of chickpeas with the liquid into a food processor

  3. Drain the liquid from the second can of chickpeas into a container (if needed to use during grinding).  Then add just the chickpeas into the food processor.

  4. Add the oil with the cooked jalapeno into the food processor.

  5. Add the Honey Ginger Dressing to the food processor.

  6. Grind till the chickpeas is slightly coarse to smooth.  If it is too thick add the liquid, that was put aside from the second chickpeas can, little at a time.

  7. Taste and if desired add a bit of salt or 1 to 2 tbsp of the dressing

  8. Empty the grinded chickpeas into a serving bowl. If slightly thickened hummus is desired, then cover and refrigerator for couple hours.

Pine Nuts:

  1. On a low heat roast pine nuts in a pan till it turns light brown. Toss periodically.

Assemble the dish

  1. Push chickpeas away from the center of the dish and place the bison meat in the center. Sprinkle the roasted pine nuts.  Drizzle with olive oil (optional).

    Serve with warm pita bread or romaine lettuce
